Internet of Things for Table Olives Fermentation – Green and Digital Manufacturing
The European Innovation Project DIH-World aims to accelerate the adoption of advanced digital technologies by European small and medium-sized enterprises (SMEs) in all manufacturing sectors, supporting them in building sustainable competitive advantages and access to global markets.
DIH-World strengthens the capabilities of Digital Innovation Hubs (DIHs), especially in under-represented areas across Europe. The ultimate goal is to accelerate the maturity of DIHs and the development of their collaboration capabilities, and to avoid the DIH “gap of digital innovation hubs” due to lack of access to technologies, skills, networks, investments and infrastructure.
Thus, they will be able to capitalize and utilize their resources and facilities for the benefit of their local SMEs. DIH-World funded the TOFIoT experiment which will be presented at the event, among others. TOFIoT offers a digital solution for monitoring the quality control of table olive fermentation aimed at small and large scale producers. Utilizes IoT sensor technology to measure biometric conditions in table olive fermentation tanks remotely, simplifying and modernizing the process. Significant optimizations are achieved in work efficiency, as much fewer on-site samples are required. The tool also provides an unprecedented amount of data in terms of process transparency and traceability and serves new business models. In addition, fermentation will be evaluated on the basis of scientific tools as opposed to the commonly encountered Do-It-Yourself-DIY tools, ancient or local experimental formulas.
